Chipotle Pork Ribs


6 lbs. back ribs cut into 2 rib sections seasoned with salt and pepper

24 Tomatillos
8 Cloves garlic
5 Chipotle chiles
4 Cups water
2 Tsp salt
2 Tsp pepper

Sear the ribs on all sides. Meanwhile in a dry skillet roast the tomatillos until browned and the garlic until lightly toasted. Place the tomatillos, garlic, chipotle chiles, water, salt and pepper in a blender and purée. Pour over the seared ribs in a pan, cover and bake at 350° for two hours or until tender.
